Autumn Recipe with Essential Oils.

With Autumn in full swing and Winter right around the corner, it's time to think about making heartier, warmer foods that boost our immune system and feed our souls. Here is a great recipe that uses cinnamon and clove (both anti-microbial oils) and nutmeg (supports adrenal function). Onions and garlic help to ward off contagion and build the immune system, too.

BUTTERNUT SQUASH SOUP

2 Tbsp. olive oil
2 onions, chopped
2 cloves of garlic, chopped
2 lbs. peeled butternut squash, cubed
4 cups vegetable broth
2 drops clove oil (Syzygium aromaticum)
3 drops nutmeg oil (Myristica fragrans)
1 drop cinnamon oil (Cinnamomum zeylanicum)
Salt and pepper to taste

In a soup pan, saute onions, garlic, salt, and pepper in olice oil over medium heat until onions and garlic are tender. Add cubed squash and cook for 3-5 minutes. Add broth and boil on medium-high heat.

Using a hand mixer, puree all ingredients in pan until soup is smooth. Stir in essential oils. Allow oils to infuse the soup for 5-8 minutes, then serve. If desired, add yogurt or sour cream Makes 5 1/2 cups.
